This creation will soon be available in Monaco

At One Monte-Carlo, media, chefs, and SBM staff gathered on Friday, November 21, 2025, to choose the Yule log that the resort will sell for the Christmas holidays. The victory went to the Pastry Department!

Having arrived in Monaco just five months ago, Léo Scherer, pastry sous-chef at the pastry department of the Société des Bains de Mer (SBM), won the internal Christmas Yule log competition on Friday, November 21.

A victory that undoubtedly holds a special significance for this young man from Alsace: "It was important for me to win, especially coming from Alsace, the capital of Christmas," he smiled.

With the theme "Christmas Melody," he designed a chocolate sleigh intended as a centerpiece. "The sleigh was a natural choice. Many Christmas carols mention it," he explained.

His Yule log blends Alsatian inspirations with regional products: a hazelnut crunch, vanilla rice pudding evoking "childhood memories," a compote of Corsican clementines enhanced with a hint of Menton yuzu, a rolled marshmallow insert with the same citrus fruits, and a hazelnut mousse. "I really wanted to represent the region: the almond from Provence, the Corsican clementine, the Menton yuzu... It was important," he insists.
